Waterford Estate
You come to Waterford Estate for Cabernet Sauvignon and chocolate. The winery sits on the slopes of the Helderberg in Stellenbosch, where the kitchen pairs its wines with handcrafted chocolates by Richard von Geusau — dark chocolate with rock salt, milk chocolate with rose geranium. The tasting room pours their flagship red blend, The Jem, which blends eight estate-grown varietals with Cabernet Sauvignon at its core.
The estate runs guided tastings that compare past and present vintages to show how time changes the wine. You can also take a cellar tour to see where the barrels age. The Wine Drive Safari takes you through the vineyards in a vehicle, stopping at viewpoints for sips of wine matched to the landscape.
The chocolatier’s pairings have been a fixture since 2004, and the kitchen refreshes its menu seasonally to match the wines. Book ahead for the tastings; they fill quickly, especially for the Wine and Chocolate experience. The Jem, first bottled in 2004, has scored highly with critics and remains the wine they want you to try before you leave.
