The winery sits on the Hemel-en-Aarde Ridge, nine kilometres from the ocean, where south-westerly breezes cool the grapes and slow their ripening. The vineyards grow in 450-million-year-old clay and decomposed shale, with slopes that drain well and face west for sunlight.

The tasting room serves wine in Riedel glasses, each shape chosen to direct the wine to a different part of the palate. Reds come slightly chilled to balance their tannins. Chef Warwick Taylor prepares dishes with local ingredients, many from within fifty kilometres, including herbs from the estate’s garden.
